In the 1858 New York City Directory, Mustard producer George Geissen is listed as a having his facility at #64 Elizabeth Street, and boarding at #77 Bowery. Gessen was also a private in the 12th Regiment, New York State Militia, serving for 30 days, during the New York Draft Riots.
This eye catching jar, has the classic barrel shape which made it instantly recognizable as a mustard jar. The addition of the word "Union" to the name, as well as the eagle motif, demonstrates how merchants connect their products to patriotism to make them more desirable in the eyes of consumers.
